It reboots randomly without any warning and sometimes it takes forever too boot Windows. Hard drive is fine, I don't have ESR meter yet to check for caps, could it be the southbridge?

Windows probably detected a problem so it rebooted on you. (default behavior)
If Windows has a fatal error, it will reboot itself by default. (Microsoft's "feature" of NT-based Windows)ASRock B550 PG Velocita

Have you run memtest?
