on searching around it seems IC u168 when its faulty and gets hot it will cut out the volume anyone else experienced this ?

Common fault on these... requires a hot air gun to remove (has a thermal pad soldered on bottom of IC)

No need to spend that much:

You will NOT be able to remove this without a hot air gun (at least, not without destroying the board)

Replace IC U168, or build a small sound circuit for the sound , if u happen not to get the same IC

Maybe I'm out of my element on this one but wouldn't it be easier to add a heat sink to the top of the chip, or is it done for by the time it starts cycling with the heat?

No, it'll only hide the problem. The chip has obviously suffered internal damage and will fail completely soon. Besides they don't run very warm in operation - maybe 10~15 degrees C above ambient - so the heatsink would have to be bloody good to stop that rise from occurring.
