Third and final update for posterity: I found a complete boardview file from this comment which gave me the location of the pin that I then heated up for a couple of seconds with my hot-air gun and now the Laptop is booting again without pressing near the CPU / Pin. -
Yet another update: Measuring voltage drop at these capacitors shows ~0.275V. The suspect capacitor shows ~0.280V. When pressing near the CPU this also drops to 0.275V and when booting while holding the CPU pressed down the SSD gets detected. Now to figure out how to fix this.Leave a comment:

After some more digging I figured out that the voltage on C8671 from PCIE8_L0_SATA1_TXP is very odd. The voltages on the other capacitors are very stable ~17mV however this voltage is not stable at all. I'm worried that since this trace comes straight from the CPU it means something bigger.Leave a comment:

Lenovo Thinkpad X1 Carbon Gen 8 - 20UA - 2100 Detection Error on Storage Device
Hi all,
I have a Thinkpad X1 Carbon that does not want to recognize any SSD I put in it. I have verified that the M.2 drive works in another Laptop and reflashed the BIOS with the Lenovo provided ISO file from here however the issue still stands.
Could reflashing the BIOS with a dedicated programmer fix this issue or what else is there to check?
I have attached a schematic and boardview pdf in case it helps anyone.
