Not sure if you're on right track (performance wise) with lowering number of Hd's, using fewer bigger discs (they do have bigger cache, but mostly optimized for write operation), instead of using more lower sized HD's...
But you can't go wrong, it's small network (low count of computers), and people (users of computers) are not /mostly/ multitasking capable (can't watch two or more movies at the same time, and certanly can not watch movie and do productive work :-))...
