Cisco VoIP phones: proprietary software?

I'm researching a VoIP deployment. We get LOTS of discarded Cisco VoIP phones. Can these be repurposed to work with FOSS VoIP solutions (e.g., Asterisk)? Or, do they require "Cisco's own" solution...
