Mechanical failure - temp sensor beatup up, broke, got water in it, broken wires, corrosion I would also rule out. It might be a thermistor but the resistance could be compared between ovens.

Check if the triac on the big heatsink is shorted between MT1 and MT2. Those are the fat wires on it. That would leave heat on all the time until the safety cutouts trip.
Triac is TAG semiconductor...

Maybe post a pic of the pc board, the newer version A-5 seems to have parts numbered transistors Q400-up, caps C400-up and the old JFET version was like C16, C17 with a few extra op-amps for servos.

The diode D243 is for 22V fan motor it seems. An ES3 (https://www.vishay.com/docs/88589/es3.pdf) is a normal diode 0.9Vf and will run ~20% hotter than Schottky SS36...
