Dimmer will not work since it chops up the sine wave (beside, you cannot use dimmer with inductive load-the transformer-anyway). You need to use VARIAC if you want to slowly bring up the voltage while you monitoring the current draw, so you will need AC meter or Clamp-0n AC Amp meter.
